Ingredients

  • 1 pound ground beef, ground lamb, or a mix of both

  • ½ cup fresh parsley, finely chopped

  • 1 medium onion, grated or very finely minced

  • 2 garlic cloves, minced

  • 1 teaspoon ground allspice

  • 1 teaspoon ground cumin

  • 1 teaspoon salt

  • ½ teaspoon ground black pepper

  • Olive oil for brushing

Instructions

  1. Prepare the mixture

  2. In a large bowl, combine the ground meat, parsley, onion, garlic, allspice, cumin, salt, and pepper.

  3. Mix well with your hands until fully combined but avoid overworking the meat to keep it tender.

  4. Shape the kafta

  5. With damp hands, form the mixture around skewers into long, oval-shaped kabobs about 1 inch thick. If you do not have skewers, shape them into patties or logs.

  6. Grill or broil

  7. Preheat a grill or broiler to medium-high heat. Brush the kafta lightly with olive oil.

  8. Grill for 4–5 minutes on each side until browned and cooked through, about 10–12 minutes total.

  9. Serve
